Here is a little something different to throw on the grill–inspired by a recipe from Paula Wolfert’s Couscous and Other Good Food From Morocco. To make these really special, acquire some ras el hanout. If you can’t find it, use a small pinch each of clove, ginger, cinnamon, coriander, cayenne, nutmeg and turmeric. You can serve these little burgers on a bun, or in a pita with cucumber, or with couscous and chickpeas.

Spiced Grilled Lamb Burgers
Ingredients
- For the lamb burgers:
- 1 pound ground lamb
- 1 egg
- 1/2 red onion, chopped fine
- 1 clove garlic, minced
- 1 TBLS each fresh mint and cilantro, chopped
- 1/2 tsp cumin
- 1 tsp ras el hanout spice mixture
- 1 1/2 tsp kosher salt
- 1/2 tsp ground black pepper
- For the yogurt sauce:
- 1 clove garlic, minced
- 1 tsp fresh mint, chopped
- 1 cup greek yogurt
- salt and pepper, to taste
Instructions
- For the lamb burgers:
- Mix all ingredients together well.
- Form into 8 small patties.
- Grill over medium-high heat until brown on each side and cooked through, about 5 minutes per side.
- For the yogurt sauce:
- Combine all ingredients.
- Adjust seasoning to taste.
- Serve with pita and cucumber.
