Hot, delicious sourdough hotcakes with melting butter and syrup? What more is there to say? See the little 5 year old smile back there?
You have to start the night before with mixing up the dough. So worth it.
Recipe adapted from Joy the Baker. I left the oil out and got a slightly crispier cake. Really, the best pancakes ever. It is worth the 2 weeks to make that starter and the late night pre mix to get these on Sunday morning. Delicious with strawberry jam.
Sourdough Hotcakes
Ingredients
- 1 cup
sourdough starter - 1.5 cup
filtered water - 1.5 cup
ap flour - 1 cup
whole wheat flour - 2
eggs - 1 cup
milk - 1 tsp
baking soda - 2 tbls
sugar - big pinch
salt
Cooking Directions
- The night before, mix starter, water and flour. Cover and let sit out overnight.
- In the morning, add eggs, milk, soda, flour, sugar and salt.
- Fry in a bit of butter.



This looks delicious — the sourdough starter seems a little daunting — but I can’t wait to try it out.
