Sourdough Hotcakes

 

Hot, delicious sourdough hotcakes with melting butter and syrup?  What more is there to say?  See the little 5 year old smile back there?

You have to start the night before with mixing up the dough.  So worth it.

Recipe adapted from Joy the Baker. I left the oil out and got a slightly crispier cake. Really, the best pancakes ever.  It is worth the 2 weeks to make that starter and the late night pre mix to get these on Sunday morning. Delicious with strawberry jam.

Sourdough Hotcakes

 

Ingredients

  • 1 cup
    sourdough starter
  • 1.5 cup
    filtered water
  • 1.5 cup
    ap flour
  • 1 cup
    whole wheat flour
  • 2
    eggs
  • 1 cup
    milk
  • 1 tsp
    baking soda
  • 2 tbls
    sugar
  • big pinch
    salt

Cooking Directions

  1. The night before, mix starter, water and flour. Cover and let sit out overnight.
  2. In the morning, add eggs, milk, soda, flour, sugar and salt.
  3. Fry in a bit of butter.
